HOW TO PREPARE THE FAMOUS “MACHACADO WITH EGGS”

Heat oil in a frying pan, fry chopped onion, chopped chili and dried beef until golden brown.  Add chopped tomato and garlic and simmer.  Add eggs, stirring until cooked.  (1egg for .71 oz. , one person serving)

Ingredients
  • 1 1/2 cup(s) tomatillo salsa or your favorite
  • 4 Oz Carne Seca Doña Blanca's Gourmet Dried Beef
  • 5 cup(s) H‑E‑B Tortilla Chips, plus more as needed
  • 1 jalapeño, thinly sliced
  • 2 cup(s) H‑E‑B Fancy Shredded Colby Jack Cheese, shredded
  • 1/2 cup(s) green onions, chopped

​Instructions

Preheat oven to 350°F. In a non-stick oven safe pan, add salsa, shredded beef, and toss together until salsa is bubbly. Add chips and jalapeños; toss to combine. Cover with cheese and place into oven until cheese is just melted. Garnish with fresh green onions. Season to taste as needed with salt and pepper.
Add a Fried egg on top to top it off.






Chipotle Machacado Pâté 

 
​Ingredients
  • 4 Oz Carne Seca Dona Blanca Machacado
  • 5 individual chipotle peppers in adobo sauce
  • 1 1/4 cup(s) sour cream
  • 3 garlic cloves, smashed
  • 1 cup(s) fresh cilantro, leaves loosely packe
  • 2 Tbsp fresh lime juice

Instructions

Combine all ingredients in a food processor and pulse until smooth, season to taste as needed. Spread on crusty bread, or pita chips.

Shredded Beef Flautas

Ingredientes
  • 3 cup(s) vegetable oil, plus more as needed for frying
  • 1 Tbsp garlic, minced
  • 1 cup(s) white onions, diced 
  • 1 jalapeño, seeded and minced small
  • 1/3 cup(s) cilantro, chopped
  • 4 Oz Carne Seca Doña Blanca's Gourmet Dried Beef 
  • 1/2 cup(s) lime juice
  • 6 flour or corn tortillas, plus more as needed
  • 1 cup(s) queso fresco, crumbled small

Instructions

Place oil in a heavy bottomed pot and set over medium heat. Heat oil to 350ºF. In a sauté pan add a tablespoon of oil, then add garlic, onions, jalapeños and cilantro. Cook 4 to 5 minutes. Add beef and lime juice and stir-fry until liquid is evaporated completely. Set aside to cool. For making flautas, place a spoonful of beef mixture into a tortilla and sprinkle with queso fresco. Roll up and secure with toothpicks. Repeat process with each. Place flautas in oil and fry in batches being careful not to over crowd pan. Cook until golden brown and crispy. Allow to drain on a paper towel. Serve with salsa, sour cream or guacamole as desired.
